6 Satisfying and Scrumptious Lunches

Looking for an easy yet satisfying, scrumptious and nourishing lunch? A bit bored with what you’ve currently got on rotation? Looking for some inspiration? Never fear lovely folk, I have you covered with some of my favourite lunches below. They’re all tasty, oh so tasty and easy. Enjoy!

 

Frittata for the win

I’m all for easy yet delicious dishes…and frittatas are no exception. They also work really well for meal prep as you can make a big one then slice it up and have it throughout the week. There are endless combinations of what you can put in a frittata too, and they’re especially great for using up whatever veggies you have in your fridge. This leek, pumpkin and goat’s cheese frittata is one of my all time favourites.

Toasted wraps (or fresh…whatever you fancy!)

Such a simple yet tasty idea. Plus the texture is always fun – a little crisp and crunchy on the outside, while being soft on the inside. There are loads of great wrap combinations you can easily throw together too. I always aim for a protein (e.g. leftover chicken, canned salmon, eggs, chickpeas, black beans, tofu), veggies (e.g. leftover roast or grilled veggies, leafy greens like baby spinach or rocket, sliced tomato or cucumber, grated carrot, olives, pickles), something spreadable (e.g. avo, hummus, baba ganoush, pesto, salsa, tzatziki, tahini), and any extras (e.g. duukha, za’atar, pepper, chili flakes, goat’s cheese, squeeze of lemon juice, fresh herbs).

 

Here are just a few wrap combo ideas:

  • Falafel, hummus, baby spinach. tomato and za’atar

  • Chicken, leftover roast veggies, tzatziki and rocket

  • Black beans, avo, salsa, tomato, cucumber and lettuce

  • Scrambled eggs, sliced mushrooms, rocket and pesto

  • Grilled tofu, grated carrot, baby spinach, tahini and fresh coriander or parsley

These homemade baked beans

Ahh a good old classic. Baked beans are smoky, sweet, earthy and oh so satisfying. This homemade baked bean recipe is easy to make using pantry staples and is also low cost. Serve them with a slice of toast and veggies (I’m thinking a salad or leftover roast veggies would be delish!).

 

Salad (or as I like to call it, ‘bowl food’)

Who says you can’t make friends with salad? They’re basically a pick and mix of all your favourite veggies and flavours in a bowl. It’s also great to ensure you have a source of protein (e.g. chicken, tofu, eggs, salmon, legumes, tempeh), complex carbs (e.g. brown rice, buckwheat, quinoa, sweet potato) and fats (e.g. avo, nuts and seeds, extra virgin olive oil) to help keep your blood sugar levels stable and ensure you feel satisfied and full. Cozy soups and stews

I looooove me a soup or stew any time of year. I always say they’re like a big comforting hug in a bowl. Simply throw all the ingredients in a pot, let it cook away, and hey presto! They’re also low cost, incredibly versatile with whatever herbs, spices and veggies you have lying around…aaaand will leave your kitchen smelling amazing. Here are three of my favourites

 

This chicken, zucchini and fennel pie

Much like frittata, this chicken, zucchini and fennel pie is a perfect dish to make ahead of time for super easy lunches throughout the week. Featuring fennel, zucchini and some of my other favourite veggies, plus flavour additions such as nutmeg and lemon, this pie is scrumptious and satisfying.
