Christmas Ginger Breakfast Trifles

These ginger trifles are the perfect breakfast (or snack or dessert) at Christmas time (or any time of the year!). Just think of dipping your spoon into three layers of festive perfection - crunchy spicy muesli, silky sweet yoghurt, and tangy fruity jam. Enjoy!

Serves 2-3

Ginger muesli
1 cup rolled oats
2 heaped teaspoons ground ginger (add an extra teaspoon if you like it really gingery!)
1 heaped teaspoon cinnamon
3/4 teaspoon nutmeg 
1 cup chopped nuts / seeds (for a Christmassy feel I recommend hazelnuts, pecans, pepitas, sunflower seeds and slivered almonds)
Pinch of salt 
2 tablespoons coconut oil 
1 tablespoon black strap molasses
1 tablespoon maple syrup 

1. Preheat your oven to 180 degrees conventional
2. In a large bowl, mix all the dry ingredients together in a large bowl
3. In a small pot over low heat, stir together the coconut oil, blackstrap molasses and maple syrup until it’s all melted
4. Pour the wet mixture into the dry mixture and stir until well combined
5. Transfer to a lined baking tray. Spread out the mixture so that it’s in a single layer. Pop it into the oven and bake for 12-15 mins or until golden (keep a close eye on it 

Vanilla yoghurt
2 cups plain Greek yoghurt
2 teaspoons vanilla extract 
2-3 tablespoons maple syrup 

1. In a large bowl, stir all the ingredients together

Berry / cherry jam
2 cups frozen berries or cherries
2 tablespoons chia seeds, blended 
2 tablespoons water

1. In a small pot over low heat, stir everything together. Keep stirring constantly until all combined (about 3 minutes)

Now it’s time to assemble your trifles!
1. In a glass or jar, start with 2-3 spoonfuls of muesli, then add 1-2 spoonfuls of yoghurt, then a spoonful of jam. Repeat this again. Then finish with a layer of the muesli on top.

P.S. You might have some muesli left over. Store it in a jar in the fridge and use it for breakfast, lunch, dessert or anything you want!
