Choc Granola

Just like a chocolate milkshake, only crunchy! And oh so nourishing! This cacao granola is delicious as either breakfast, dessert or a snack. Eat it on it’s own, with milk and berries, or sprinkled over the likes of smoothies and yoghurt. So so yum!

Choc Granola

Makes about 4 ½ cups

 1 ½ cups rolled oats
½ cup buckwheat
1 cup mixed nuts and seeds, chopped (I used almonds, walnuts and pepitas)
¼ cup flaxseeds
2 tablespoons cacao nibs
¼ cup cacao
80ml coconut oil
1 teaspoon vanilla extract
1 to 2 tablespoons rice malt syrup or maple syrup (optional)

1. Preheat your oven to 140 degrees Celcius conventional
2. Combine all the dry ingredients in a bowl
3. Melt the coconut oil and whisk in the vanilla extract (and the rice malt or maple syrup if you’re adding it)
4. Fold the wet mixture into the dry mixture
5. Spread the mix evenly over 2 lined baking trays
6. Bake for about 40 to 50 minutes, stirring every 10 minutes or so. Keep an eye on it as it’s baking to make sure it doesn’t start to burn.
7. Allow to cool completely on the tray, then enjoy! Best stored in a container in the freezer
