Choc Quinoa Pudding

If I know I have an early start I sometimes like to prep breakfast the night before, and this recipe is my always my go to! Nutty quinoa works so well with cacao. All the additions work perfectly as well – adding zucchini provides more bulk and gives a serve of veggies, the berries are the perfect flavour addition and provide a serve of fruit, the cacao nibs add crunch, the nuts/seeds/desiccated coconut give texture and provide a serve of quality fats, and the protein powder provides complete protein of course! I don’t think you could ask for much more than that!

Serves 1

¼ cup quinoa, uncooked
½ zucchini, grated
1 scoop plain or vanilla protein powder
1 heaped teaspoon cacao
1 teaspoon cacao nibs, optional
40ml milk of choice – I love to use almond milk for this recipe
handful of berries (or any other fruit you like)
small handful of nuts, seeds or desiccated coconut – I used crushed walnuts here

1. Cook the quinoa as usual
2. Once the quinoa is cooled, stir in the grated zucchini
3. Add the protein powder, cacao and milk and stir to combine
4. Stir in the cacao nibs if you’re using them
5. If you’re eating this deliciousness right away, serve in your favourite bowl and top with the berries and nuts/seeds/coconut. If you’re making this the night before for the next morning, transfer to an airtight container and put in the fridge, then when you’re ready to eat add the berries and nuts/seeds/coconut.
