Black Bean Hemp Patties

Daaaang these patties know where the party is at! Full of colour and flavour, these babies are delicious and super easy to make. Fun fact – hemp seeds are an awesome source of omega 3 and are high in protein. They also pair perfectly with the black beans, yum! I definitely recommend serving them with some avocado on top and these herby spiced wedges. Enjoy!

Makes 9 patties

1 can black beans, drained and rinsed
1/3 cup hemp seeds (can substitute for other nuts or seeds, finely chopped)
450g pumpkin or sweet potato, roasted
1 small carrot, grated
1/3 cup parsley, finely chopped
1 teaspoon paprika
pinch cayenne pepper
pinch black pepper and salt
¼ lemon, juiced

1. Preheat your oven to 180 degrees Celsius
2. Blitz the black beans very briefly in a food processor or blender (only for a couple of seconds so that they don’t get too blended. You can also mash them up a bit with a potato masher or fork)
3. Mix everything together in a bowl until well combined
4. Form into patty shapes with your hands and place onto a lined baking tray
5. Pop them in the oven and bake for 25 – 30 minutes, or until crispy and browned at the edges
6. Enjoy!
