Pumpkin Cinnamon Bliss Balls

Are you looking for a scrumptious snack to take to work or uni? A little pop of pumpkin perfection to lighten your arvo? An after dinner delight?A bliss ball that is in fact bliss in a ball? Well here’s your answer! It’s no secret that I love pumpkin so it probably doesn’t come as a surprise that I’ve created yet another recipe with them…I just couldn’t help myself! These babies are the perfect snack to take to uni, work, or wherever your day takes you. Feel free to get creative with them too –  add some chopped walnuts or goji berries, roll them in flaxseed as well as coconut…they’re fun to play around with!

Pumpkin Cinnamon Bliss Balls

Makes 12

200g pumpkin, steamed then mashed
1 teaspoon cinnamon
¼ cup plain protein powder
¼ cup almond meal
3 tablespoons desiccated coconut
2 dates, pitted
2 tablespoons milk (I used almond milk)
1 tablespoon coconut oil
Extra desiccated coconut, to coat

1. Cover the dates with warm water and set aside to soak for about 10 minutes, then drain
2. Combine the pumpkin, cinnamon, protein powder, almond meal and desiccated coconut in a large bowl.
3. Blend the dates, milk and coconut oil in a blender
4. Stir the date mix into the pumpkin mix
5. Pop the mix in the fridge to set for 1 to 2 hours
6. Take spoonfuls of the mixture and form them into balls using your hands
7. Roll each ball in extra desiccated coconut to coat
8. Enjoy!

P.S. These babies are best stored in an airtight container in the fridge. You can even store them in the freezer if you want them to last longer.
