Cinnamon Drops

So light. So fluffy. So heavenly. Enough said.

Makes 12 biscuits

2 scoops plain or vanilla protein powder
4 tablespoons oat flour
2 teaspoons baking powder
5 teaspoons cinnamon
2 teaspoons vanilla extract
150ml milk of choice
4 dates, pitted

1. Preheat your oven to 180 degrees Celsius conventional
2. In a bowl, whisk together the dry ingredients
3. In your blender, blend together the vanilla, milk and dates
4. Carefully fold the wet mixture into the dry mixture
5. Drop large spoonfuls onto a lined baking tray
6. Sprinkle with some more cinnamon and bake for about 14 minutes
7. Allow to cool on the baking tray for 10 minutes, then transfer to a cooling rack to finish cooling (though they’re even more heavenly when eaten warm!). Enjoy!
