Frozen Choc Berry Bites

Coated in dark chocolate and featuring burstin’ berries, these frozen choc berry bites are a surefire crowd pleaser. Not only do they taste oh so good, the texture is also oh sooo fun…bite through a delicious layer of dark chocolate to a mixed berry jam and yummy vanilla frozen yoghurt. Keep a bunch in the freezer for an easy, tasty and cooling snack or dessert whenever you wish!

Makes about 28 bites

3 tablespoons chia seeds
2 cups frozen mixed berries
1 cup plain Greek yoghurt
1 teaspoon vanilla essence
1-2 tablespoons maple syrup (optional, if you want the bites a little sweeter)
About 200g dark chocolate

1.  To make the mixed berry jam mix - in a small pot over medium heat, heat the berries until soft. Stir frequently and mash gently with a spoon as you stir (keep some of the berries intact for bursts of berry deliciousness). Turn off the heat and stir in the chia seeds, mixing really well for a couple of minutes. Allow the mixture to finish cooling (it’ll continue to thicken as it cools!)
2. To make the vanilla yoghurt mix - in a small bowl, mix together the yoghurt, vanilla and optional maple syrup
3. Use a teaspoon to place dollops of the yoghurt onto a tray lined with baking paper. Then repeat the process, using a teaspoon to place a dollop of the berry jam mixture onto each yoghurt dollop. Pop the tray into the freezer for about an hour
4. Melt the dark chocolate. Take the tray out of the freezer. Use two forks to dip each bite into the melted chocolate and place back on the baking tray immediately. Place them back in the freezer for at least 30 minutes
5. Enjoy!

P.S. You’ll have some of the mixed berry jam leftover. Pop it in a clean jar and store in the fridge. It’s delicious as an addition to toast, muesli, porridge, yoghurt, smoothies and more!
