Roast Rhubarb and Crushed Nut Crumble

Mmmm this recipe is one of my current favourites. Think warm, sweet and juicy roast rhubarb paired with crunchy spiced crushed nuts…oh dangggg, you might just have your go to Autumn dessert sorted! Although, to be fair, it’s also darn delicious as breakfast or a snack any time of year that you can get your hands on some rhubarb. Best served in your favourite bowl with a big ol’ dollop of yoghurt, even better while curled up on the couch with a cozy blanket. Enjoy!

For the rhubarb

1 bunch rhubarb, washed and cut into thirds (roughly 10cm pieces)
1 orange, juiced
1 tablespoon maple syrup
1 teaspoon cinnamon

For the crushed nut crumble

1 ½  cups mixed nuts (I used almonds, walnuts, pecans and hazelnuts), crushed or finely chopped
1 tablespoon coconut oil
1 tablespoon maple syrup

1. Preheat your oven to 160 degrees Celsius
2. In a small pot over low heat, add the coconut oil and maple syrup. Stir until it all melts (this should take less than 30 seconds) and set aside. Scatter the nuts on a lined baking tray in a single layer, then pour the coconut oil and maple syrup mixture over the nuts. Pop the tray into the oven to toast for 5-10 minutes (be sure to check them regularly as they can burn quickly!). Once they look slightly toasted and smell delicious, take them out and set them aside.
3. Turn the oven up to 180 degrees Celsius. Place the rhubarb in a single layer on a baking dish lined with baking paper. In a small bowl, whisk together the orange juice, maple syrup and cinnamon. Pour this mixture over the rhubarb and pop the dish into the oven to bake for 15-25 minutes or until a fork can be poked into the rhubarb (you want the rhubarb to be tender and keep its shape, rather than mushy).
4. Serve the rhubarb with the crushed nut crumble mixture sprinkled on top and a big dollop of yoghurt (or whatever you darn well please) on the side. Enjoy!

P.S. You’ll likely have a bunch of the crushed nut crumble mixture left over. Use this atop porridge, overnight oats, yoghurt, pancakes, toast, smoothies, roast veggies or even salads. They’re basically a delicious addition to anything!
